It’s going to be getting super spicy at The Cultured Deli with our new cultured hot sauce workshop

At The Cultured Deli, 27 Mill Street, Bideford.
In this practical hands on workshop you’ll be exploring how to make fermented hot sauces and condiments using seasonal produce … and chillies. You will learn how to make a ‘mash’ based condiment – we’ll be making a Middle Eastern Zhoug – a chilli paste with coriander and garlic. We’ll also make a hot sauce. I’ll provide the spice, you bring the fruit or veg that you’d like to turn into a sauce – do you fancy a rhubarb, butternut squash, carrot or peach hot sauce? Whatever takes your fancy, the process will translate into a multitude of hot sauce options.
We’ll set your Zhoug and hot sauce up ready for fermentation. You’ll take them home to nurture.
I’ll demonstrate how to turn your chilli pepper mash into a delicious spicy condiment and how to transform your chosen seasonal ingredient into a delicious hot sauce.
At the end of this workshop you will take home two hot ferments and will have the skills and knowledge to transform ANY seasonal produce into a delicious cultured hot sauce. Of course you can pasteurise your finished product to stop it from being feisty but you will lose the live cultured and beneficial bacteria. Don’t worry, I’ll walk you through this,
You will need to bring:
- An apron
- A bag to carry your goodies home
- A seasonal fruit or veg of your choice (I will send suggestions via email)
- A litre jar or bottle for your hot sauce
- a 500ml jar for your Zhoug

Stuff happens, so if you are unable to attend, please do let me know as soon as possible. I try to be flexible but, as a small business, last minute cancellations cause problems and headaches because it’s almost impossible to fill places at the last minute.
So please note when booking, that the following cancellation, refund and transfer fees apply.
• if you give me 3 weeks notice or more I can offer a full refund or transfer to an alternative date free of charge..
• If you give me 2 week’s notice, there is no refund, however, I can offer a transfer of date to a different workshop with a £5 admin fee.
• If you cancel within 5 days or less before the date of the workshop: Regrettably no refund or transfer of dates is possible.
Full refunds and alternative dates will be offered if, for any reason, we have to cancel the workshop.
